stir things up this Memorial Day
The thing about weekends is that they’re usually too short. The glorious exception is, of course, the much anticipated holiday weekend. There’s something about a three day summer weekend that begs for lots of time spent with drinks over chilled drinks – and as Memorial Day weekend is officially here, it seems only appropriate that we share some fabulous drink recipes that can be made by the pitcher. After all, the fun only really begins when there are enough drinks to go around.
Avocado & Mezcal Cocktail
Untraditional, sure. Delicious? That would be a resounding yes – and if you have any doubts that you can blend up avocados in a cocktail, then expert mixologist Junior Merino has the drink for you. In this cocktail, the creaminess of ripe avocado is accented with the crisp, smoothness of white mezcal and the brightness of lime and Cointreau. Make sure to use avocados that are slightly soft to the touch (a “sure sign they are ripe,” says Merino) and whirl in a blender with plenty of ice for a smooth, cool cocktail perfect for a warm weather weekend.
1 avocado, halved, pitted and peeled
6 ounces white mezcal
6 ounces fresh lime juice
4 ounces light agave nectar
3 ounces Midori
2 ounces Cointreau
In a blender, combine all ingredients; whirl until combined. Add 2 cups of ice and blend until smooth. Serve in a glass. Yield: about 5 cups
